Basil Walnut Dressing
Serves 4
Instead of adding whole nuts, like walnuts or pecans, to your salad (I always have trouble spearing them with my fork), try blending them with some fresh herbs and some extra virgin olive oil or flaxseed oil. You’ll get just as much nutty flavor from the dressing—and it’ll be better incorporated throughout the salad.
Ingredients:
1⁄2 cup extra virgin olive oil
2 tablespoons walnuts,toasted
Juice of 1 lemon
1⁄2 cup fresh basil
1 garlic clove, peeled
Pinch of sea salt
Pinch of white pepper
Directions:
Add all ingredients to a blender and puree for 2 minutes or until the mixture is smooth. Add more olive oil if necessary.
